GROW YOUR OWN FOOD! That's the answer to urban food insecurity. Mother Earth is giving us every thing we need to flourish and enjoy a life of abundance. Born out of the panic created by a global pandemic, PANDEMIC Farms is a project that teaches farming by utilizing all available land in the urban community. No land needs to become a wasteland of trash and refuse. All we need to do is nourish the ground with natural fertilizer and show it a little love and care, and we will have enough land to grow enough food and medicinal plants to keep us healthy and well fed. Native Plants, those plants that grow wild without any input from human hands, are Mother Earth's way of replenishing the nutrients the soil needs after having been damaged by human overuse and sometimes misuse. We, in our ignorance, call these plants Weeds, because we don't know their purpose. Through PANDEMIC Farms, we study each plant and learn its benefits, whether it is nutritional, medicinal, or helpful to insects that restore the soil to health.
Plants that grow wild without any prompting from human hands are often called "weeds." A weed. is defined a plant considered undesireable in a particular situation, growing where it conflicts with human preferences, needs or goals. We tend to dismiss these plants simply because we lack the knowledge of their many beneficial uses. Take for instance the common dandelion. This plant grows plentifully and has many beneficial uses, but in areas where homeowners are seeking to create a beautifully manicured green lawn, the presence of the dandelion is not welcomed. But it is valuable and when we learn to appreciate it, we can enjoy the delicious dishes that we can make! Don't kill dandelions with poisonous pesticides! Learn how to make dandelion greens, dandelion salad, dandelion tea, dandelion chips and so much more! The same with burdock leaves, those great big leaves that spread all over vacant lots. Nothing that grows from the ground is a "weed" when you discover its purpose and many beneficial uses! Just explore and experiment and you can create healthy food and drinks from this "Native Plant" that grows so freely without any human assistance!
We'll share a special recipe for a dish using burdock leaves called "Carduni." Its a burdock leaf veggie burger! The burdock plant's roots are known to be medicinal, but did you know that the leaves, when prepared with the right spices, can be chopped up and made into a delicious meal? We'll show you!
Once you have identified your burdock leaves for the Carduni dish, follow us step by step through the process, so you can make your own Carduni Burdock Veggie Burgers from scratch! First, thoroughly rinse the leaves. Make sure you remove all soil, bugs, and any other debris you don't want to eat.
Gather your ingredients and add them in to the mix. You need eggs to give your burdock patties some consistency and a bit of flavor.
Burdock has a strong taste and could be considered bitter if not boiled twice. Change the water between boilings, but don't overcook the leaves so they become too mushy.
You'll definitely want that special onion flavor in your Burdock Veggie Burger. Chop an onion up finely so that it is easy to mix in.
Stir it all up in a big mixing bowl and get ready to make your patties. Remember, they will spread out in the pan so use a big spoon to measure out each one, especially if you plan to put it on a bun.
If you're a cheese lover, you'll really enjoy the taste of this cheesy burdock burger. Spread on the slices of cheese while your ingredients are frying in the skillet. Make sure to cook burgers well on both sides.
Pour own your favorite ketchup and create a red, yellow and green colorful meal you can eat between a bun or like a steak with a fork!
